[Book Summary] Salt, Sugar, Fat—Michael Moss

Michael Moss cut into this topic from various angles so that readers (a listener in my case) can have a holistic view.

A well-known case is low-fat and zero-fat milk, which are products resulting from consumers' concern about a high-fat diet. Where does the fat go? Well, they are turned into "cheese" and enter the American diet again.

He also mentioned some diseases that are related to overly processed food, including heart disease, cardiovascular disease, overactivity, etc. However, unfortunately, they are offered at a very low price (because of low cost) so the financial-challenged group is most vulnerable when under exposure. Ironically, the CEOs of these companies stay away from their products as much as possible.

There're two key lessons in this book that I'd like to share with you.
  1. To inspire creativity, tell me where you want to go but not how you want to go.
  2. The selling of a product matters the same as the product itself if not more.

One anecdote is that Michael mentioned a Lead Food Scientist—Robert Lin—at a giant food company. He happens to be Taiwanese, too.
